Coconut Curry with Tofu and Rice
This is a Thai inspired coconut curry, with fresh ginger, bell peppers, lots of local organic tofu, and a splash of lemon. It's flavourful and creamy, and has the perfect gentle balance of sweet and spicy.
Ingredients: coconut milk, organic tofu, rice, water, onion, red pepper, green pepper, carrot, fresh ginger, olive oil, lemon juice, gluten-free vegetable broth concentrate (vegetable juices [water, concentrated juices of carrot, celery, onion, tomato, cabbage juices], maltodextrin, salt, sugar, yeast extract, garlic powder, spice, mushroom extract, natural flavour), gluten-free tamari, curry, cumin, turmeric, sea salt, chili flakes.
1 serving. Fully Cooked. Frozen product. Gluten-free.
Thaw first, remove the lid and cover with tinfoil. Bake at 350 until hot throughout (approximately 25-30 mins). You can also heat it in the microwave - transfer to a microwave safe container first!
