"Corn grits are simply coarsely ground bits of dried corn. They have long been a traditional staple of both Northern Italy and the American South that are usually cooked and eaten hot as a porridge, or cooked and then slightly cooled until firm and sliced into squares.
For a savoury porridge, or side dish: (4 servings)
- Bring to a boil 3 cups water and 1/2 tsp sea salt.
- Add 1 cup corn grits.
- Cook slowly for about 5 minutes, stirring occasionally.
- Remove from heat and cover for another 5 minutes.
- Serve topped with margarine, nutritional yeast, salt and pepper.
Pro Tip: You can soak the grits in water overnight before cooking to get a creamier texture!
