Butter Chickpeas with Rice
This is our version of the classic Indian dish, butter chicken. We substitute chickpeas for a plant-based protein, and use creamy coconut milk and a dollop of peanut butter instead of animal fat. It's a rich and flavourful dish, with lots of spices - but not too much heat. This dish proves that comfort food doesn't have to be bland!
Ingredients: chickpeas, onions, tomatoes, rice, coconut milk, natural peanut butter, tomato paste, vegetable oil, sea salt, curry spice, turmeric, cumin, paprika, onion powder, chilli flakes.
1 serving. Fully Cooked. Frozen product. Gluten-free and soy-free.
Thaw first, remove the lid and cover with tinfoil. Bake at 350 until hot throughout (approximately 25-30 mins). You can also heat it in the microwave - transfer to a microwave safe container first!
